Tepache
I love making this fermented drink because it uses pineapple skins which I otherwise would have thrown out. An Instagram follower suggested that I make this and I am hooked. It is so easy to make I can't believe I can make this probiotic rich drink without a scoby. It is delicious. Some people call it pineapple beer.
Ingredients
- Skins of 1 pineapple
- 1/2 cup of brown sugar
- 1 cinnamon stick
- a knob of ginger sliced
- cloves (optional)
- water
Put all the ingredients in a glass vessel. I used a 2L glass vessel. Fill with water leaving about an inch from the top. Mix well and make sure all the pieces of pineapple are submerged. Cover it with a breathable top and elastic. I used a towel. Mix everyday making sure the pineapple skin are not sticking out of the water. Where I live it ferments in 5 days during the summertime and 10 days in winter. After the 1st fermentation it is time to bottle it up. I use EZ bottles which are especially made for fermentation. I let that sit outside of the fridge for another 2-3 days. Place it in the fridge before you open it!
The result is sweet, slightly sour and bubly. I love it so much and I hope you do too. Let me know if you try it!
